என் சிறு வயதில் என் அப்பாவிற்கு Tanzania-வில் வேலை. அதனால் சிறிது காலம் என் பாட்டியின் வீட்டில் நானும், அம்மா மற்றும் அண்ணனும் வசித்தோம். என் பாட்டிக்கு 11 பிள்ளைகள். எங்கள் சித்தி புற்றுநோயில் இறந்து விடவே, அவரது குழந்தை கோகுலை பாட்டியே வளர்த்தார். எப்பொழுதும் மகப்பேறு, அது, இது என்று ஒரு பட்டாளமே வீட்டில் இருக்கும். சில சமயம் என் பெரியம்மா மகள் பத்மா அக்காவும் எங்களுடன் இருந்த ஞாபகம். பாட்டி தினமும் 4 மணிக்கு எழுந்து விடுவார். நிறையக் குழந்தைகள் என்பதால் வீட்டிலேயே பசு வளர்த்தார். வேலை ஆட்கள் பசு மாடத்தைச் சுத்தம் செய்வதில் அவருக்கு உடன் பாடு இல்லை. பசு மாடத்தை அவரே சுத்தம் செய்து, பால் கறந்து பராமரித்தார். எல்லாக் குழந்தைகளும் 3 வேளை அவர் கண் முன் ஒரு பெரிய கப் பால் குடித்தே ஆக வேண்டும். பால் வளரும் குழந்தைகளுக்குப் அவசியம் என்று பெரிதும் நம்பியவர். அவர் சிரித்து நான் ஒரு நாளும் பார்த்தது இல்லை. அவ்வளவு ஸ்ட்ரிக்ட். ஏதோ ஒரு வேலை செய்து கொண்டே இருப்பார்.
சனிக் கிழமை ஏன் தான் வருகிறது என்று நான், என் அண்ணன் மற்றும் தம்பி கோகுல் பயந்த காலம் அது. சனி கிழமை லீவு நாள் தானே. ஏன் பயப்பட வேண்டும் என்று நீங்கள் கேட்பது புரிகிறது. சொல்கிறேன்.
வீட்டின் வெளியில் ஒரு பெரிய பிரத்தியேக குளியலறை இருக்கும். அதன் அருகில் விறகு அடுப்பு தக தக என்று மணிக் கணக்கில் எரியும். அடுப்பின் மேலே உள்ள பாய்லரில் தண்ணீர் சூடாக கொதித்துக் கொண்டு இருக்கும். பலி ஆடுகளாய் நாங்கள் லைனில் பாய்லருக்கு அருகில் எண்ணெய் தேய்த்து அமர்ந்திருந்த ஞாபகம். வரிசையாகப் பாட்டி எங்களைக் குளிப்பாட்டி (துவைத்து) விடுவார். சூடாக குளித்தால் தான் கிருமிகள் போகும் என்று நம்பியவர், அவ்வளவு சூடாக வெந்நீர் ஊற்றிக் குளிப்பாட்டுவார். தண்ணீர் சூடாக இருக்கிறது என்று கூட வாயைத் திறக்க பயம். அரைப்பு தேய்த்து எங்களைத் துவைத்து வெளியே அனுப்புவார். வீட்டின் உள்ளே வந்தால் ஒரு பெரிய டம்ளர் பால் காத்திருக்கும். ராகி மால்ட் மற்றும் பாதாம் பால் இருக்கும். எனக்குப் பால் என்றாலே பிடிக்காது. வீட்டில் அம்மாவிடம் பால் வேண்டாம் என்று மல்லு கட்டுவேன். பாட்டியின் முன் கப் சிப். பாதாம் பால் எப்படியோ என்னுள் கண்ணில் நீர் பிதுங்க இறங்கும். எவ்வளவு குடித்தாலும் சனியன்- டம்ளர் தீரவே தீராது. குடித்து முடித்த பின்னர் சோம்பலாய் அனைவரும் அமர்ந்திருப்போம். தூக்கம் மம்மானியாக வரும். தலைக்குக் குளித்தவுடன் தூங்கினால் ஜலதோஷம் பிடித்து விடும் என்று தூங்கி வேறு தொலைக்க கூடாது. எங்களுடன் பாட்டி வீட்டில் வரதராஜ் மாமா இருந்தார். சுத்த பிரம்மச்சாரி. எங்களுடன் அன்பாய் பழக கூடிய மனிதர். அவரது ரூமில் மட்டுமே வீடியோ கேசட் பிளேயர் இருந்ததால் நாங்கள் படம் பார்க்கிறோம் பேர் வழி என்று பாட்டியிடம் இருந்து எஸ்கேப் ஆகி மொட்டை மாடி மாமா அறைக்குச் சென்று விடுவோம். மாமாவிற்கோ தெலுங்கு மொழி என்றால் உயிர். ANR , NTR என்று அவர் ரூமில் அவர்களது பட காசெட்டுகள் திரும்பிய வண்ணம் இருக்கும். தெலுங்கு பாடல் காசெட்டுகள், புத்தகங்கள் என்று எங்கு பார்த்தாலும் ஜிலேபியை பிச்சி போட்டார் போல் தெலுங்கில் அட்டை பட எழுத்துக்கள். பேருக்குத் தமிழ் பக்தி பட காசெட்டுகளும் இருக்கும். சனி, ஞாயிற்றுக் கிழமைகளில் ஒரு தெலுங்கு வாத்தியார் வேறு எங்கள் மாமாவிற்குத் தெலுங்கு கற்று கொடுக்க வருவார். ஒரு புறம் ANR படம் ஓட, மறு புறம் தெலுங்கு பட வகுப்புகள் நடக்க, நாங்கள் குளித்த மயக்கத்தில் தெலுங்கு மனம் கமல ஆனந்தமாய் உறங்கி விடுவோம். பாதாம் பால் குடித்த வுடன் ஒரு தூக்கம் வரும் பாருங்கள், அப்பப்பா என்ன கொடுமை சரவணா! அதை இன்று நினைத்தாலும் பாட்டி முன் தூங்கி வழிந்த ஞாபகம் கண் முன் நிற்கின்றது. எனக்கு இருந்த சிறு வயது உலக யுத்த பிரச்சனைகளில் பாட்டி முன் தூங்கி வழியாமல் இருப்பது ஒன்று. பால் குடிப்பது இரண்டாவது. ஒரு பார்வை பார்த்தாலே போதும். கண்கள் ஈரமாகி விடும். பால் கட கட வென இறங்கும். அந்த கோல்டன் பிரேம் கொண்ட கண்ணாடி வழியில், அந்தப் பெரிய முறைக்கும் கண்கள் இன்றும் கண் முன். எங்களுக்காகவே 4 மணிக்கெல்லாம் முழித்து பால் கறந்த பாட்டியின் பாசம் இன்று புரிகிறது. அன்றோ எங்களுடைய ஒரே ஹிட்லர் அவர் தான். இன்றோ பல வருடங்களுக்குப் பின்னால், பாட்டியும் இல்லை, பசுவும் இல்லை. எஞ்சி இருப்பது பாதாம் பால் குடிக்கும் போது வரும் ஞாபகங்கள் மட்டுமே.

Lets talk about the ingredients that go into making of the badam milk powder from scratch.

Almonds and Pistachios – I like to use almonds with the skin on. The skin gets ground to a fine powder. You can use peeled almonds too if you want a brighter color on the finished almond milk. If feeding for children, soak the almonds overnite in water and dry them completely the next day and proceed with the recipe as it will be easier for digestion. Almonds can be slightly roasted too.
Cardamom – Cardamom is a very important flavor in badam pal. Use generously. While grinding, I use the whole pod with the skin to grind.
Turmeric and Saffron – Turmeric and saffron add to the beautiful yellow hue that’s so traditional in badam milk. I do not use artificial colors.
Here is how to do it!
Grind the badam (almonds), pistachios, saffron, cardamom and turmeric with a little sugar to a smooth powder. The sugar will keep the nuts from oozing out oil while grinding. Grind as fine a powder as possible. Pulverize several times to achieve a smooth texture.

Store this powder in an airtight container and use it within a month. Store the powder in the freezer to avoid the powder from becoming rancid over a period of time.

To make badam paal
Boil a cup of milk in a kettle. If you are vegan, you can use any plant based milk. Add in a heaped teaspoon of the prepared badam milk powder and a teaspoon of sugar. Bring to a simmer for couple of minutes. Remove from heat and serve hot!

You can refrigerate the badam pal and serve cold as an after dinner shake / dessert too!

Badam Paal made with home made badam milk powder

Tamil style badam milk made with badam milk powder made from scratch. Recipe for Badam milk made with almonds, pistachios, cardamom and saffron.

Ingredients

For the Badam Milk Powder

  • 20 Almonds (see notes)
  • 10 Pistachios
  • 3 tablespoon sugar
  • 8 cardamom pods
  • 1/4 teaspoon turmeric powder
  • a pinch of saffron

For making Badam Milk

  • 1 cup of milk (use plant based milk if vegan)
  • 1 heaped teaspoon badam milk powder
  • 1 teaspoon sugar
  • Saffron strands for garnish

Instructions

    A small suggestion, instead of using raw nuts, either roast them, or soak, dry and powder them. As it may be hard to digest for little ones.
