Ingredients
1 tablespoon vegetable oil (divided)
2 tablespoons garlic, chopped
1/2-inch piece of ginger, chopped
3 green chillies
1.5 cups onions, sliced
1 teaspoon salt (divided)
1.5 cups Broccoli (including stems)
3 cups palak (spinach) greens
1/4 teaspoon cumin seeds
2 tablespoons onions, finely chopped
200 grams paneer, cubed into small pieces
1/4 teaspoon garam masala
1/2 cup water
3 tablespoons coconut milk
Instructions
In a pan, heat two teaspoons of oil and add garlic, ginger, green chillies, and onions. Sprinkle salt and sauté for a few minutes until the onions start to brown. Adjust the amount of green chillies according to your preference.
Add the Broccoli with stems and the palak greens to the pan. Cook for a few minutes until the greens wilt. Remove from heat and let the mixture cool down a bit.
Grind everything to a smooth paste and set it aside.
In a pan, heat remaining oil and add cumin seeds and finely chopped onions. Sauté for a few minutes until the onions become soft.
Add the cubed paneer, salt, and garam masala. Sauté for a minute to heat up the paneer.
Now, add the ground greens paste to the pan. Rinse the mixie with a little water and add it back to the pan to get all the remaining goodness. Pour in the coconut milk and bring everything to a simmer.
Your delicious Broccoli Palak Paneer is now ready to be served. Enjoy it with chapati or rice.

I made this recipe today and did a few minor modifications – added 1/4tsp garam masala to the broccoli spinach mix at the last step before cooling and grinding it. Other than that, followed the exact recipe and it came out really good. I love sneaking veggies into recipes to get that additional nutritive boost.
