Roasting the nuts

  • 1 teaspoon ghee
  • 1/2 cup nuts of your choice

Wet Ingredients

  • 1/2 cup sugar
  • 1/4 cup vegetable oil / sunflower oil
  • 1/4 teaspoon pure vanilla extract (use only a drop if using artificial vanilla)
  • 1/4 teaspoon salt
  • 1 egg
  • 1/2 cup milk (preferably full fat)

Dry Ingredients

  • 1 cup Maida (All purpose flour)
  • 1 teaspoon baking powder

Instructions

  1. Preheat the oven to 200 degrees Celsius.
  2. Roast the nuts in ghee. Set aside.
  3. Mix all the wet ingredients together.
  4. Sieve the dry ingredients and add to the wet ingredients.
  5. Add half of the nuts and mix well.
  6. Pour the batter in prepared muffin tin.
  7. Sprinkle the remaining nuts on top.
  8. Bake for 12-15 minutes.
  9. Vanilla Nut Muffins are ready.
