Easy Recipe for crispy oven baked popcorn chicken. Made with potato chips and breadcrumbs. This recipe does not use buttermilk. A very simple marination using a dry rub and a wet marination. Recipe with step by step pictures and video.

Baked popcorn chicken is one of the most easiest starters that can be done in no time. This fast food favorite is crispy, crunchy and very addictive. The secret to this baked popcorn chicken is potato chips. The chips has enough fat while the potatoes is starchy and makes for a crispy crunchy outer coating. Since its baked, its easy to make. I would not say that its healthy but its damn sure tasty. This is something I make whenever I crave for fast food. I even throw these nuggets inside a bun with some mayo and we got ourselves a sandwich quickie. Do try this baked popcorn chicken at home.

First we will make a coating for the chicken.

Potato chips is the secret ingredient that gives this dish a superb crunch. Take a bowl and add in the potato chips and four slices of bread. I have used regular bread for making the bread crumbs. If you have ready made bread crumbs, grind the potato chips and then add the bread crumbs. For a super crunchy pop corn chicken, try making this recipe with panko bread crumbs. I did not have panko at home. So I have made it with regular bread crumbs. This recipe is very forgiving. Use whatever you find at home.

Grind the chips and the bread crumbs to a coarse powder. Its very important that the powder is coarse and not fine. Grind in batches if necessary and use pulse mode in the mixie. Do not over grind.

The coating should be coarse. So keep an eye on the texture while grinding. Set aside.

Now we will make a dry rub for marinating the chicken for making popcorn chicken.
Take a small bowl and add in all the ingredients listed under dry rub.

Mix everything to combine. Set aside.

Now we will make a wet marinating liquid for making popcorn chicken..
Add in all the ingredients listed under marinating liquid in a small bowl

Whisk well to combine.

The chicken
We will need boneless chicken breast for this recipe. Cut the chicken into small cubes. Make sure that the cubes are even so it bakes evenly. Do not cut into big pieces. Keep the pieces small.

Marinating the chicken for making popcorn chicken.
Take a big bowl and add in the cubed chicken pieces to the bowl. Add in the dry rub mixture that we prepared earlier.

Mix well with a spatula to combine.

Now, add in the wet liquid and mix well.

Once mixed, let the chicken marinate for 30 minutes.

Dredge the marinated chicken in the potato-bread crumb mixture. Make sure its dredged in the mixture thoroughly.

Preheat the oven for 15-20 minutes at 200 degrees Celsius / 400 degrees Fahrenheit. Bake the chicken for 20 minutes at the same temperature. Turn the chicken pieces once after 10 minutes so it bakes evenly. Remove the chicken after the said time and serve hot.

The coating for popcorn chicken

  • 100 grams potato chips
  • 4 slices plain bread

Dry Rub for popcorn chicken

  • 2 tablespoon maida (All Purpose Flour)
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic bread seasoning
  • 1 teaspoon piri piri seasoning
  • 1 teaspoon red chilli powder
  • 1 teaspoon black pepper powder
  • 1 teaspoon salt

Marinating Liquid for popcorn chicken

  • 1 egg
  • 1/2 teaspoon plain vinegar
  • 1 teaspoon chilli sauce
  • 1 teaspoon soy sauce
  • 1 tablespoon tomato ketchup

The Chicken

  • 500 grams boneless chicken breast

    These came out great! I used much lesser chips than called for (husband had bought 64g pack of chips and I had doubled everything else) but it still came out quite crunchy. Also reheated up to supreme crispiness in the air fryer (I made wraps for eating round #2).

    I would reduce the oregano (not a fan) next time round but otherwise cannot wait to make it again! Thank you!
